We meticulously wove beautiful new memories into the rich, treasured tapestry of Christmases past. The air was thick with abundant warm hugs, punctuated by bouts of joyous laughter and moments of poignant tears. Delicious food flowed freely, accompanied by singing – some joyful, some reverent – heartfelt toasts, the soft glow of candlelight, and an overwhelming sense of love shared all around. It was a time that underscored the profound importance of connection and tradition, reminding us of the enduring bonds that tie us together.

Our family holds many cherished Christmas traditions, and any attempt to deviate from them is often met with vociferous (though good-natured) complaint! The preparations begin long before December 25th, involving specific cooking and baking projects, countless secret twitterings, and subtle tweaks to ensure everything is just right. This year, however, felt distinctly different. In the months leading up to Christmas, we navigated the profound heartache of watching a most beloved uncle bravely succumb to a devastating cancer, ultimately saying our goodbyes to him just weeks before the festive season. This profound loss, coupled with losing my dear father-in-law earlier in the year, made for an intensely emotional Christmas. It was a season that touched our heartstrings far more deeply, reinforcing with immense clarity how truly precious every single moment spent with family is. It taught us to cherish the present, to hold loved ones closer, and to find profound beauty in shared experiences, even amidst sorrow.

A Culinary Triumph: Mastering the Christmas Goose and Festive Feasts

Our home was brimming with family throughout the holidays. My mom, sister and her family, along with various partners of our children, all stayed under one roof. A total of fourteen of us gathered to feast on traditional Fleisch Rouladen on Christmas Eve. The aroma alone was enough to fill the house with festive cheer, a testament to generations of culinary heritage. Then came the ultimate challenge for me this year: I finally mastered roasting the goose for our beloved traditional Christmas Day dinner. For several years now, I’ve taken on this significant task – my mom had always prepared it in the past – but each year, despite my best efforts, that goose proved to be as tough as an old goat. Whether I followed mom’s recipe with sauerkraut and prune stuffing, or tried variations without, using high heat or really low heat, the result was always the same: tough. I was genuinely beginning to lose heart, questioning if I would ever achieve that moment of pride, carrying a perfectly bronzed, succulent roast goose to the table. Well, this year, it happened! The tradition, thankfully, can now continue with confidence, ensuring future generations will enjoy this centerpiece of our Christmas feast and reinforcing the idea that perseverance pays off, even in the kitchen.

On Christmas Eve, all fourteen of us crowded into our living room, our voices blending in joyful carols, sung in both German and English, accompanied by our daughters on piano and guitar. We exchanged gifts, shared endless laughter, and reveled in the pure joy of the season until two in the morning. It was an undeniably special night, filled with warmth and connection. The blessings continued into Christmas morning as we woke to the sight of overflowing stockings that Santa had magically stuffed in the night, bringing wide smiles to everyone’s faces and a renewed sense of childlike wonder.

Our celebrations continued with a special birthday breakfast for our oldest, who is lucky enough to have been born on Christmas Day! What a unique and festive day to celebrate a birthday, truly adding to the magic of the season and doubling the joy of our holiday gathering.

Boxing Day brought even more family over for good times, complete with a lively Mexican fiesta and, of course, the obligatory wacky Christmas sweaters! These lighter, more playful gatherings provided a wonderful contrast to the formal Christmas Day, allowing everyone to relax, share stories, and fully embrace the festive spirit in a different, equally memorable way.

Navigating Winter’s Whims and Embracing New Beginnings

Just when we thought the holidays couldn’t get any more eventful, fate dealt us a small but memorable hiccup. On the 27th of December, as the mercury plunged to a frigid -35°C (-31°F) during the night, our furnace decided, quite dramatically, to cough its last. Imagine: two nights without central heating in the heart of a northern Alberta winter, with nine extra people staying in our home! We quickly rallied, assembling a brigade of space heaters, donning extra layers of sweaters and warm socks, and managed to keep our spirits high and the house cozy enough to continue celebrating a warm and wonderfully crazy family holiday. This unexpected challenge became another shared memory, a testament to our family’s adaptability and good humor. Then, as if by magic, Santa brought us a much-needed, albeit belated, “gift” in the form of a brand-new furnace, expertly installed by two incredibly handy, insulated-coverall-clad elves. A huge thank you, Santa, for saving our chilly Christmas extended stay and restoring our warmth just in time!

The festivities aren’t quite over yet, though! Tomorrow, we’ll embark on a journey further north to visit Raymond’s family and joyously ring in the New Year with them. I’m eagerly anticipating more laughter, good food, and shared moments as we transition into a fresh start. This period of reflection and celebration, despite its challenges, has truly reinforced the value of family, resilience, and the simple pleasures of togetherness.

I haven’t tried it yet, but I’m confident these delightful tuna boats would be absolutely divine with fresh, raw, sushi-grade tuna, finely diced, in place of the canned variety. That’s definitely on my list to try very soon, and I imagine it would elevate the dish to an even more gourmet level! Furthermore, don’t feel limited to tuna salad. These versatile cucumber boats can be filled with your favorite salmon salad or shrimp salad for equally delicious results. For a completely different, yet equally tasty, twist, you could even fill the boats with classic egg salad, creatively making the little ‘sails’ from triangles cut from your cucumber peel trimmings. The possibilities are endless for customizing this fresh, healthy appetizer to suit your taste and dietary preferences.

Japanese Style Wasabi Tuna Boats

Ingredients:

  • 1 can (198gms/7oz) good quality tuna, preferably oil-packed for richer flavor and smoother texture
  • 3 tablespoons good quality mayonnaise, regular, full-fat for best creaminess and binding
  • 2 tablespoons finely minced onion, adding a subtle crunch and aromatic depth without being overpowering
  • 1 tablespoon rice vinegar, for a hint of tang and authentic Japanese-inspired flavor
  • 1½ teaspoons wasabi paste, adjust to your preferred level of heat and zest for that signature kick
  • ¼ teaspoon salt, to enhance all the flavors and balance the sweetness
  • ¼ teaspoon pepper, freshly ground for best results and a subtle spice
  • ½ sheet of sushi nori roasted seaweed (approximately a 4×8-inch/10x20cm piece), essential for those iconic ‘sails’ and added umami depth
  • 1 large English cucumber (at least 13 inches/33cm long), or six 2-inch sections, forming the crisp and refreshing base of your boats
  • 1 teaspoon white or black sesame seeds, for garnish and a nutty finish that complements the Asian flavors
  • A handful of cherry tomatoes for serving, optional, adding a burst of vibrant color and sweetness to the platter

*Flavor Variation Option: For those who prefer a different flavor profile, you can easily replace the wasabi with an equal amount of creamed horseradish for a different kind of pungent kick. Instead of seaweed, try incorporating a few tablespoons of freshly chopped parsley into the tuna mixture for an herbaceous, fresh twist. In this variation, create your charming boat ‘sails’ from small triangles expertly cut from the cucumber peel trimmings you’ve removed to level the bottom of the boats. This offers a delightful alternative, perfect for diverse palates or when you’re looking for a non-seafood variation.

Instructions:

  1. Begin by thoroughly draining the oil from the can of tuna. Transfer the tuna to a medium bowl. To ensure stability on your serving platter, stand each cucumber half on its cut end, then trim a thin slice of peel off down the center of the rounded side of the boat. This creates a flat bottom, allowing the boat to sit level and upright when placed cut side up. Using a melon baller or a small teaspoon, meticulously scoop out the seeds and some of the watery flesh from the center of each cucumber piece, forming a hollow cavity. Make sure to leave a sturdy ¼-inch (0.5cm) wall at each end of the boat for structural integrity and to hold the filling.
  4. It’s time to fill your boats! Place one generous tablespoon of the prepared wasabi tuna filling into the scooped-out hollow of each cucumber boat, gently mounding the filling for an appealing presentation. Using the tip of a butter knife, carefully press a shallow slit into the top of the tuna salad where you envision your ‘sail’ being placed. Then, take one of your prepared seaweed triangles and gently press its base into this slit. Use your fingers to lightly pinch the tuna salad around the base of the sail, providing a stable foundation to hold it upright and proud, creating a truly charming mini-sailboat.
  5. Arrange your beautifully assembled wasabi tuna boats onto a clean serving platter. If you’re using cherry tomatoes for added color and freshness, cut them into halves and artfully arrange them among the tuna boats. Finally, sprinkle everything evenly with white or black sesame seeds for a final touch of elegance and a subtle nutty flavor. Serve these delightful appetizers immediately to enjoy their crispness and vibrant flavors at their peak.
  6. To Make Ahead: For stress-free entertaining, you can prepare the wasabi tuna salad (storing the little seaweed sails separately in a small sandwich baggie to keep them crisp) and scoop out the cucumber boats up to one day in advance. Store the tuna salad and the hollowed cucumbers in separate, airtight containers in the refrigerator. Assemble the Wasabi Tuna Boats just before serving to maintain the optimal freshness and texture of the cucumber and prevent sogginess.
