These cooling watermelon granitas were the perfect accompaniment to our leisurely lunch and conversation. The sun felt genuinely hot, creating that perfect ambiance for sharing good food and laughter. The best part? Simply sitting back, relaxing, chatting, and savouring the company – and, of course, these amazing granitas.

This simple recipe truly impressed, serving as a light and invigorating finish to our al fresco meal. Requiring just three core ingredients and an ice cream maker, it’s remarkably straightforward. I prepared my first batch about four hours before serving, achieving that ideal soft, slushy, and perfectly cold consistency. If you opt to make it the day before, it will freeze firmer, resembling more of a traditional granular ice – which is also delightful. For a slightly softer texture when made ahead, simply take it out of the freezer about 15 minutes before you plan to scoop and serve. Instructions:

  1. Prepare the Watermelon: Ensure your watermelon is sweet and ripe for the best flavor. Remove all rind and seeds, then cut the flesh into manageable chunks.
  2. Blend the Watermelon: Place half of the watermelon chunks into a high-speed blender and liquefy until completely smooth. Add the remaining watermelon chunks and blend again until the entire mixture is a smooth liquid. (If your blender is smaller, you may need to do this in two separate batches). You should yield approximately 6 cups of watermelon juice.
  3. Add Flavorings: Pour the freshly squeezed lime juice and agave nectar into the blender with the watermelon juice. Blend for a few more seconds to ensure all ingredients are thoroughly combined.
  4. Chill the Mixture (Optional, but Recommended): For the firmest results in an ice cream maker and slightly faster freezing, it’s best to chill the mixture in the refrigerator for at least 30-60 minutes before proceeding. However, if you’re pressed for time, you can skip this step; just be aware that the mixture might not freeze quite as firmly in the ice cream maker and may require a longer post-freezing time to reach the desired consistency.
  5. Freeze in an Ice Cream Maker: Pour the chilled watermelon mixture into a 2-quart (2-liter) ice cream maker. Follow your manufacturer’s directions for freezing. This typically takes about 20-30 minutes, resulting in a soft, slushy consistency.
  6. Final Freeze & Serve: Scrape the partially frozen granita from the ice cream maker into a freezer-safe container. Freeze for an additional 4 to 5 hours before serving. For the best, most granular texture, stir or scrape the slush once or twice during this final freezing period to break up any large ice crystals. This method helps achieve the signature light, icy, and somewhat flaky texture of traditional granita.

No-Churn Granita Method (No Ice Cream Maker Required!)

Don’t have an ice cream maker? No problem! You can still achieve a fantastic granita with a bit of patience and a fork.

  1. Prepare Mixture: Follow steps 1-3 from the main recipe to create your watermelon, lime, and agave mixture. Ensure it’s well blended.
  2. Pour into Pan: Pour the mixture into a shallow, freezer-safe metal or glass baking dish (a 9×13 inch pan works well, or a similar size). The shallower the pan, the faster it will freeze.
  3. Initial Freeze: Place the pan in the freezer and let it freeze for about 30-60 minutes, or until ice crystals begin to form around the edges.
  4. Scrape and Stir: Remove the pan from the freezer. Using a fork, vigorously scrape the icy mixture from the edges towards the center. Break up any large ice chunks and stir thoroughly.
  5. Repeat: Return the pan to the freezer. Repeat the scraping and stirring process every 30-60 minutes for 3-4 hours, or until the entire mixture has frozen into delicate, icy flakes. The more often you scrape, the finer and more consistent your granita will be.
  6. Serve: Once fully frozen and flaky, scoop into serving dishes and enjoy!

Tequila Option: For an Adult Twist

To infuse your Watermelon Lime Granita with a subtle, delightful alcoholic kick, simply add ¼ cup (60ml) of tequila to the mixture when you incorporate the lime juice and agave nectar in step 3. Feel free to adjust the amount of tequila to your preferred strength. If tequila isn’t your spirit of choice, vodka or white rum make excellent substitutes.
