We highly recommend making the full batch, as leftover risotto is absolutely divine! Reheat it gently and serve it as a fantastic side dish, or elevate your breakfast with a creamy portion topped with a perfectly poached egg.
Wine Selection: While the recipe calls for red wine, don’t hesitate to experiment! White wine or rosé can be wonderful alternatives, each adding a slightly different nuance to the flavor profile. A dry white wine will lend a crisp freshness, while a rosé might enhance the subtle fruitiness. All options yield delicious results.
Risotto Rice Essentials: As discussed, the type of rice is paramount. Arborio is widely available and a reliable choice. - 5½ cups (1.32 liters) chicken or vegetable stock
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided (use vegan butter substitute for dairy-free/vegan)
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 cup (150gms) shredded, firmly packed raw beets, about 3 medium (2 inches/5cm in diameter), or shredded cooked beets
- 1½ cups (300gms) Carnaroli rice (or Arborio rice)
- ¾ cup (180ml) dry red wine (or dry white wine/rosé)
- Zest of 1 fresh lemon
- 1 cup crumbled feta cheese (or coarsely chopped toasted walnuts for dairy-free/vegan)
- Chopped fresh dill or parsley to garnish – optional
Instructions:
- Prepare the Stock: Pour the chicken or vegetable stock into a medium saucepan. Place it on the stove over low heat and bring it to a gentle simmer. It’s crucial to keep the stock hot throughout the risotto-making process, as adding cold stock will cool down the rice and interrupt the cooking.
- Sauté Aromatics and Beets: In a wide, heavy Dutch oven or a large skillet, heat the olive oil and 2 tablespoons of the butter over medium-high heat. Add the finely diced onion, minced garlic, salt, pepper, and the shredded raw beets (if using cooked beets, you will add them later, with the first ladleful of stock). Sauté for 3 to 4 minutes, stirring occasionally, until the onion has softened and turned translucent, and the beets begin to release their color.
- Toast the Rice: Add the unrinsed risotto rice to the pot. Stir continuously for two more minutes, allowing the rice grains to toast slightly. The key is to wait until most of the previous ladleful of stock has been absorbed by the rice before adding the next. A good indicator is when you scrape a flat spatula down the center of the pan, and it leaves a clean path with the liquid slowly oozing in to refill it. Never let the risotto cook completely dry between additions. Continue this process, stirring frequently but not necessarily constantly, until you have used all but the last ½ cup of the stock.
- Check for Doneness: This entire stock-addition process should take approximately 20 to 25 minutes (about 20 minutes for Arborio rice and 25 minutes for Carnaroli rice).
