Spring fever has undeniably taken hold, and I can feel the vibrant energy of the season bubbling up inside me. The air is crisp, the sun is warmer, and the promise of growth is everywhere. Just last week, we embarked on the fulfilling task of planting three-quarters of our garden. The very next day, a long, soaking rain descended, nurturing the newly sown seeds and transplanting our efforts with a refreshing drink. Oh, that feeling of nature’s timely intervention was truly good for the soul. This past weekend, we proudly finished planting the remainder of our garden. Now, with a sense of hopeful anticipation, we await those tender green rows to begin peeking out from the rich earth, signaling the start of another bountiful harvest season.

To safeguard our delicate new transplanted seedlings from the harsh elements of hot sun and cool nights, we diligently cover them with pots for their crucial first few days.

My amazing mother, who is 82 years young, possesses an unparalleled energy in the garden that leaves me in awe. It’s truly a challenge to keep up with her tireless pace as she works with incredible dedication and enthusiasm. She’s nothing short of a working machine, inspiring us all with her passion for cultivating the earth.

Meanwhile, Raymond had his own significant task. After meticulously rototilling the entire garden, preparing the soil for optimal growth, he turned his attention to an old woodpile, diligently burning it away. This annual ritual helps clear space and repurpose old timber, contributing to the overall order and readiness of our expansive outdoor space.

The first promising signs of new life are already making their appearance! Tiny baby kale seedlings, lovingly planted on Mother’s Day, are now gracefully peeking out from the soil in our raised garden beds. Each delicate sprout is a testament to the cycles of nature and the patience of gardening, promising fresh, nutritious greens for our spring and summer dishes.

Adding to the garden’s pleasant surprises, some Italian greens we planted last year have remarkably returned on their own, thriving once again in their established beds. It seems they found their spot quite agreeable and decided to grace us with their presence for another season, embodying the resilience and generosity of nature. This unexpected bounty is always a delight, offering a spontaneous addition to our spring meals.

Beyond the cultivated rows, our entire yard is ablaze with the vibrant hues of spring. Colorful blossoms are unfurling everywhere, painting a magnificent tapestry of nature’s awakening. Every corner holds a delightful burst of color, from delicate pastels to bold and bright shades, a true feast for the eyes and a jubilant declaration of the season’s arrival.

Our majestic pear tree has burst into a glorious profusion of blooms, its branches laden with delicate white petals. It’s a breathtaking sight, a true symbol of renewal and abundance in our natural surroundings.

I absolutely adore how the charming yellow cowslips have gracefully naturalized and spread into various parts of our lush green lawn, adding unexpected bursts of color.

Each year, our robust lovage plant proudly emerges as one of the very first and most vigorous herbs to bravely push through the soil. Its celery-like aroma is a welcome sign of the garden’s awakening. Right alongside it, the delicate asparagus spears are just beginning to make their debut, slender and tender, promising delicious meals ahead. I can hardly contain my excitement to grill some of these fresh, verdant stalks, celebrating the rich flavors of early spring.

And topping off all this burgeoning spring bounty, the highly anticipated spring morels have finally arrived! My wonderful mushroom-picking friend, Alex, recently dropped off several handfuls of these exquisite and delicate treats. The moment I saw their distinctive caps, my mind immediately conjured up images of a glorious mound of creamy mushrooms atop crispy toast – the most elegant yet simple way to truly celebrate the season’s unparalleled flavors.

These fascinating fungi, Verpas (Verpa Bohemica), are often referred to as false morels or early morels. Many mushroom hunters regrettably pass them by, largely due to lingering misconceptions about causing gastrointestinal upset or even being outright toxic. However, Verpas have a long and storied history of being safely picked and enjoyed across Europe for centuries. They are a common sight in the bustling markets of Germany and are even processed and canned for commercial sale. Similarly, they are a beloved culinary staple in Scandinavian countries and Italy, where they are cherished for their unique flavor. The key, as with many wild mushrooms, is to ensure they are fully and thoroughly cooked to neutralize any potential compounds. I suppose we enjoy a bit of culinary adventure, as we’ve been fortunate enough to eat them for the past few years, always finding them utterly delicious and a true highlight of spring’s edible offerings. Always remember to properly identify any foraged mushrooms and cook them thoroughly.

This year, I opted for a wonderfully simple preparation to truly let the Verpas shine. I gently sautéed them with a generous knob of rich butter and a sprinkle of fresh thyme, plucked directly from our thriving garden. While fresh thyme offers an unparalleled aroma, dried thyme certainly works beautifully as a convenient alternative. The subtle difference is minimal when combined with the robust flavor of the mushrooms.

We are fortunate to have three distinct types of thyme already thriving in our herb bed: classic garden thyme, elegant silver thyme, and fragrant lemon thyme, each offering unique aromatic notes.

To elevate the dish with a special, unexpected touch, I added a delicate splash of whiskey near the end of the cooking process. The robust, earthy notes of whiskey beautifully complement the deep, umami flavors of the mushrooms, creating a harmonious and sophisticated taste profile. However, if whiskey isn’t to your preference, a splash of water works perfectly well to deglaze the pan and create a slight sauce. A few generous spoonfuls of sour cream are then stirred in, adding an irresistible richness and a subtle tang that wonderfully offsets the deep, luscious earthiness of the mushrooms. The final, glorious step is to pile these creamy, fragrant mushrooms onto a slice of perfectly golden, buttered toast. Dig in immediately and allow yourself to be transported by this incredible symphony of flavors!

Creamy Mushrooms on Toast

  • 2 tablespoons butter

  • 2 large handfuls (about 2 cups) fresh wild mushrooms (such as morels, oyster, chanterelle), button mushrooms, cremini, or a delightful combination
  • 1½ teaspoons chopped fresh thyme (or ½ teaspoon dried thyme for convenience)
  • ¼ teaspoon sea salt
  • A few generous grindings of fresh black pepper
  • 1 tablespoon whiskey, cognac, or water (for deglazing and adding depth)
  • 2 tablespoons sour cream (for richness and tang)
  • 2 slices of your favorite bread, toasted to a golden crisp and generously buttered
  • Chopped fresh chives or parsley for garnish (optional, but highly recommended for freshness)

If you’re incorporating other wild mushrooms, you can tear or dice them according to their size and desired consistency. Add the prepared mushrooms to the skillet with the softened onions, along with the fresh or dried thyme, sea salt, and fresh black pepper.

3. Continue to cook the mushrooms over medium heat. Initially, they will release their natural moisture, creating a liquid in the pan. Keep cooking, stirring occasionally, until most of this moisture has evaporated. However, don’t let the pan become completely dry; you should still see a small amount of flavorful liquid pooling around the mushrooms – this ensures they remain succulent and don’t dry out. This step concentrates their flavor and gives them a wonderful texture.

4. Pour in the whiskey, cognac, or water. Stir well and allow it to cook for about 1 minute. This step deglazes the pan, lifting any flavorful browned bits from the bottom and integrating them into the sauce, adding a layer of complex taste, especially if using an alcoholic spirit.
