Over the years, “treasure hunting” – what some might call thrifting – has become a delightful pastime, leading us to discover an abundant array of holiday linens, elegant dishes, unique serving pieces, and festive decorations. Combining our collections was an absolute joy, transforming the table into a truly spectacular and welcoming display.     • ½ cup (100 g) granulated sugar
    • 1 tablespoon fresh lemon juice
    • ½ teaspoon pure vanilla extract
    • 2 large eggs
    • 12 vanilla wafers, gluten-free if necessary (or 12 small round butter or sugar cookies, about 1½-1¾ inches/4-4.5 cm in diameter)
    • ¾-1 cup (180-250 g) Cranberry-Orange Compote Topping (recipe follows) or your choice of canned cherry or blueberry pie filling

    Cranberry-Orange Compote Topping (this recipe makes enough for approximately 2 dozen cheesecake cupcakes, with extra perfect for holiday meals or pancakes):

    • finely grated zest of 1 medium orange (yielding about 1½ tablespoons)
    • ¾ cup (180 ml) freshly squeezed orange juice, divided (from approximately 3-4 oranges)
    • ¾ cup (150 g) granulated sugar
    • 12 oz. (340 g) fresh or frozen cranberries (approximately 3½ cups)
    • 1 teaspoon cornstarch

    Instructions

     

    • Begin by preheating your oven to 350℉ (180℃). Prepare a 12-hole muffin tin by placing a paper or silicone cupcake liner into each well.
    • In a medium bowl, beat together the softened cream cheese, granulated sugar, fresh lemon juice, and pure vanilla extract until the mixture is completely smooth and creamy. You can use an electric mixer for ease or a whisk by hand.
    • Add the large eggs, one at a time, beating well after each addition. Continue mixing until the entire cheesecake mixture is perfectly smooth and lump-free.
    • Carefully place one vanilla wafer or a small round cookie into the bottom of each prepared cupcake liner. This will form the delicious crust.
    • Spoon the creamy cheesecake mixture evenly over the cookies in each cupcake liner, filling them almost to the top. Gently shake the muffin pan from side to side to help level the cheesecake filling and release any trapped air bubbles.
    • Bake in the preheated oven for 18 to 20 minutes, or until the tops of the cupcakes appear beautifully puffed up and show some slight cracking.
    • Remove the muffin tin from the oven and allow the cheesecake cupcakes to cool completely in the tin. As they cool, they will naturally fall and create a perfect indent in the middle, ready to hold your chosen topping.
    • Chill the finished cheesecake cupcakes for at least 2 hours before serving. They can be stored in an airtight container in the fridge for up to a week, or frozen for up to 6 months without the topping. Just before serving, crown each cupcake with a generous heaped tablespoon of the homemade Cranberry-Orange Compote or the delightful fruit filling of your choice.

    To Prepare the Vibrant Cranberry-Orange Compote Topping:

    • In a medium saucepan, combine the finely grated orange zest, ½ cup (120 ml) of the fresh orange juice, the granulated sugar, and all the fresh or frozen cranberries. Bring this mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium and allow it to simmer for 7-8 minutes, stirring frequently. The cranberries will begin to ‘pop’ and the sauce will visibly thicken. For a smoother compote, gently press any remaining whole berries against the side of the pot with your spoon to pop them.
    • In a small separate bowl, whisk together the cornstarch with the remaining ¼ cup (60 ml) of orange juice until smooth. Pour this cornstarch slurry into the simmering cranberry mixture, stirring it in thoroughly. Bring the sauce back to a gentle boil and continue to cook for another minute, stirring constantly, until it thickens further. The cornstarch is key here, as it helps prevent the sauce from ‘weeping’ or becoming watery on top of the delicate cheesecakes.
    • Remove the compote from the heat and allow it to cool completely. The sauce will continue to thicken significantly as it cools. This delicious compote can be stored in an airtight container in the refrigerator for up to two weeks, or frozen for up to six months, making it perfect for future uses beyond these cupcakes!

    This cheesecake cupcake recipe is wonderfully easy to double if you’re feeding a larger crowd. The extra baked (untouched) cupcakes freeze exceptionally well and are incredibly handy to have on hand for those unexpected guests or when you need a quick, elegant treat. Likewise, any leftover cranberry-orange topping also freezes beautifully.

    While our cranberry-orange compote is divine, feel free to customize your cupcakes! You can easily top them with a spoonful of your favorite jam, another fruit compote, fresh fruit, or berries, or even a convenient canned pie filling for a quick and delicious alternative.

    The Cranberry-Orange Compote recipe, as written, yields approximately 2 cups (500 ml). This amount uses one standard bag of fresh cranberries and is sufficient to generously top a double batch of these cheesecake cupcakes.
