After a long winter, there’s nothing quite like the feeling of discovering spring, and that’s exactly what we found awaiting us on Canada’s beautiful West Coast! It was an exhilarating journey that brought not only the promise of warmer weather but also incredible memories and, ultimately, the inspiration for these fantastic make-ahead breakfast cookies.

A Spring Break Adventure Through the Pacific Northwest

Our recent Spring Break road trip was an unforgettable adventure, taking us across stunning landscapes to visit beloved relatives in the lower mainland area of British Columbia. It was a true family affair, with my mom joining us and two of our kids making it along for the ride. While the vehicle may have been “cozy” with five of us, the journey itself was overflowing with laughter, shared stories, and the kind of special moments that forge lasting memories.

Beyond the joy of family reunions, we embraced our inner tourists, exploring the vibrant city of Vancouver and dedicating a couple of days to sightseeing in the dynamic city of Seattle, Washington. The contrast between our snowy departure point and the blossoming West Coast was stark and utterly refreshing.

When we first embarked on our journey, our home yard was still blanketed under a foot of snow, though the town itself was beginning to shed its winter coat – lucky ducks! (A little complaining is part of the fun, after all.) As we drove, the landscape slowly transformed. By the time we reached Jasper, Alberta, the snow at ground level had vanished, revealing the majestic beauty of the mountains. Wildlife, eager for spring’s bounty, was out in full force, grazing on the emerging vegetation at lower altitudes. They, like us, clearly sensed that spring was just around the corner.

The mountain sheep, true indicators of the seasonal shift, already sported scraggly winter fur, clearly preparing for their sleek new spring wardrobes. It was a charming sight to behold, a reminder of nature’s cyclical beauty.

The summit of Mount Robson remained wreathed in clouds, with lingering snow at its lower elevations, a beautiful reminder of winter’s last embrace before spring fully takes hold.

Discovering Spring’s Embrace in British Columbia

However, as we journeyed further into the Fraser Valley in the lower mainland, the transformation was complete. Spring was everywhere, peeking around every corner with vibrant colors and fragrant blossoms. Daffodils and grape hyacinths burst forth, painting the landscape with cheerful hues, a stark and delightful contrast to the snow we had left behind.

A relaxing stroll along the beach at White Rock was a highlight. The air was crisp, and the scenery breathtaking. My son, Andreas, ever the adventurous spirit, couldn’t resist dipping his toes into the chilly Pacific water, a refreshing, albeit brisk, initiation to the coastal experience.

The iconic White Rock pier beckoned us for another leisurely walk, offering panoramic views of the ocean and the surrounding coastline. It was the perfect spot to take in the fresh sea air and admire the tranquil beauty of the bay.

Seattle: A Vibrant City of Discovery

Next, it was off to Seattle – truly a magnificent city that captivated us from the moment we arrived. We meticulously planned two days to maximize our sightseeing, eager to soak in as much of its unique charm as possible. Our first iconic stop was a breathtaking ride to the summit of the Space Needle. From this vantage point, we were treated to unparalleled 360-degree views of the sprawling city, the glittering Puget Sound, and its numerous picturesque islands. The panorama was simply spectacular, offering a perfect introduction to Seattle’s distinctive geography and urban landscape.

Behind the Space Needle, we discovered a fascinating metal bamboo sculpture, an artistic marvel that added another layer of intrigue to the Seattle Center complex. It was a wonderful spot for a family photo, blending art and urban exploration.

Seattle truly comes alive in spring with its magnificent flowering cherry trees, their delicate blossoms creating a stunning canopy of pink and white throughout the city. It’s a truly enchanting sight that adds a romantic touch to the urban landscape.

Our adventurous amphibious Duck Tour bus ride was a definite highlight! This unique experience took us on a thrilling “mad ride” through the city streets, providing entertaining commentary and historical insights. Then, with a dramatic splash, the bus transformed into a boat, driving right into the water of Lake Union. This provided us with an entirely new perspective, tootling around to give us a closer view of the charming houseboats and city waterfront.

No visit to Seattle is complete without immersing yourself in the bustling atmosphere of Pike Place Market. It was a riot of color and activity, with stall after stall overflowing with spectacular spring bouquets in every imaginable rainbow hue. Many of these gorgeous tulips and daffodils are grown in expansive, colorful fields just a short drive from Seattle, contributing to the market’s incredible floral abundance.

And of course, Seattle stands proudly as the seafood center of the Pacific Northwest. It’s a staggering fact that 50% of all fish consumed in the United States is either caught, processed, handled, or shipped through Seattle. The market’s fish stalls were a testament to this abundance, showcasing an incredible variety of fresh catches – truly enough fish to go around!

A visit to Pike Place Market would be incomplete without witnessing the famous “fish throwing” stall. Here, dexterous fishermen expertly toss massive fresh salmon to each other with incredible precision, all while singing loudly and entertaining the delighted crowds. It’s a theatrical and unforgettable experience!

We also spent many captivating hours at the Seattle Aquarium, a truly immersive experience. From gently poking at fascinating sea urchins (though I confess, I abstained!) in the interactive areas to marveling at the enormous variety of marine life exhibits, it was a profound journey into the underwater world. The exhibits offered incredible insights into the delicate ecosystems of the Pacific Northwest and beyond.

Dining out with a group that has varied food allergies can often be a challenging endeavor, but in Seattle, we had two truly amazing experiences. We enjoyed an incredible dinner at Seattle’s award-winning vegetarian restaurant, Cafe Flora. Their delectable gluten-free pizzas, a wonderful veggie paté platter, flavorful coconut tofu, wholesome quinoa cakes, and exquisite mushroom wellington were all absolutely divine. Every dish was a culinary delight.

Before leaving Seattle, we also savored a fantastic meal at P.F. Chang’s China Bistro. The service was excellent, and the staff provided personalized attention to all our diverse dietary restrictions, making for a truly stress-free and enjoyable dining experience. It’s rare to find such accommodating establishments.

Traveling while managing gluten-free requirements can be difficult, but when you add in numerous other food allergies such as dairy, eggs, corn, and a long list of others, it can often feel downright impossible. However, these two exceptional Seattle restaurants made our eating-out experiences not only stress-free but truly memorable, proving that delicious and safe dining is indeed possible for everyone.

Vancouver’s Charms and Thrills

Back in Vancouver, we embraced a wonderful, albeit rainy, day. We spent hours wandering around the vibrant Granville Island Market, riding the charming harbour ferry bus, and exploring various unique shopping areas. The absolute highlight, however, and a truly unmissable experience, was the ‘Fly Over Canada’ flight simulation ride in Canada Place. Wow – what an exhilarating ride! I absolutely loved virtually traveling across Canada from coast to coast, soaring over majestic mountains, dipping into lush valleys, and marveling at iconic Canadian landscapes. I tried my best not to scream too loudly as it truly felt like our plane dipped perilously close over powerful waterfalls, massive icebergs, towering mountaintops, and endless prairie fields. It was an incredibly immersive and breathtaking journey.

Ultimately, the most cherished aspect of this entire trip wasn’t just the incredible sights, but the invaluable time spent with family. Catching up with aunts, uncles, and cousins whom I don’t get to see nearly often enough was truly the best part, strengthening bonds and creating new shared memories that I will treasure.

The Inspiration: Delicious Make-Ahead Breakfast Cookies

It was during this wonderful family visit that these delightful breakfast cookies entered my life. One morning, my cousin Christy hosted us for a light and bright breakfast spread. Alongside fruit smoothies, crisp bacon, an assortment of muffins, and generous bowls of fresh cut-up fruit, she served these utterly delicious breakfast cookies. I kid you not – the cookie platter was emptied in minutes, and I immediately knew I had to get her recipe! The taste was simply irresistible, and their popularity spoke volumes.

I know I’ve been on a bit of a cookie-baking spree lately, what with my must-try Healthy One-Cup Cookies (they might just give you superpowers!), and then the robust Power Patties, or the ever-popular Breakfast Balls. But these make-ahead breakfast cookies were so exceptionally good, I simply *had* to share them with you.

What sets these cookies apart, beyond their wonderful taste and wholesome ingredients, is their incredible convenience. With no leavening agents in the dough, it’s remarkably easy to prepare the dough in advance and chill it. This breakfast cookie dough can be stored in an airtight container in the fridge for up to a week, or even rolled into convenient cylinders and frozen for longer storage. This means that whenever you’re craving a quick, healthy breakfast treat, you can simply pull a roll out of the freezer, slice it, bake it, and serve it warm. Imagine warm, freshly baked breakfast cookies ready to be inhaled with minimal effort. How easy and delightful is that?

Kitchen Frau Notes on Make-Ahead Breakfast Cookies: My cousin Christy originally used 2 cups of rice flour for these cookies, and they turned out wonderfully. Wanting to incorporate more whole-grain goodness, I experimented with a blend of brown rice flour and sorghum flour, and I’m thrilled to report they tasted just as fantastic! This leads me to believe that these cookies are very forgiving and would work well with almost any combination of gluten-free flours you might have on hand. Feel free to use what you prefer or have readily available.

*For those not needing gluten-free options, you can easily substitute the two gluten-free flours with 2 cups of spelt flour or whole wheat flour. If you try another flour combination, please do leave a comment below and let me know how they turned out – I’d absolutely love to hear about your successful variations!

I also made a slight adjustment to Christy’s original recipe by reducing the amount of sugar and oil. I was very pleased with the results, finding them perfectly sweet and moist without being overly rich.

Additionally, you have flexibility with the milk. While the recipe calls for soy milk, you could certainly use regular dairy milk or almond milk if those are your preferences or better suit your dietary needs.

Make-Ahead Breakfast Cookies Recipe

gluten-free, dairy-free, egg-free, nut-free, vegan options available

Adapted from my cousin Christy, who originally adapted it from YEW Seafood + Bar in downtown Vancouver.

Yields: Approximately 48 small, healthy breakfast cookies

Ingredients:

  • 2¼ cups (210gms) quick oats (small-flake rolled oats, avoid instant oats for best texture)
  • 1 cup (130gms) brown rice flour (or your preferred gluten-free flour blend)
  • 1 cup (130gms) sorghum flour (or additional brown rice flour, or whole wheat/spelt flour for non-GF)
  • 1 cup (140gms) sunflower seeds
  • 1 cup (130gms) pumpkin seeds
  • ½ cup (50gms) shredded unsweetened coconut
  • ¼ cup (40gms) hemp hearts (or ground flax seeds for extra fiber)
  • ¾ cup (125gms) coconut sugar (or light brown sugar)
  • 1 tablespoon ground cinnamon
  • 1¼ teaspoons fine sea salt
  • 1½ cups (200gms) raisins (or a mix of golden and dark raisins)
  • 1½ cups (175gms) dried cranberries (or other dried berries like chopped apricots)
  • ½ cup (120ml) oil (grapeseed oil is a great choice for a neutral flavor)
  • ¼ cup (60ml) fancy molasses (or a blend of 2 tablespoons blackstrap molasses + 2 tablespoons honey or maple syrup for a lighter flavor)
  • 1½ cups soy milk (plain or vanilla variety; can substitute with dairy milk or almond milk)

Instructions:

  1. In a large mixing bowl (or the bowl of a stand mixer), combine all the dry ingredients: quick oats, brown rice flour, sorghum flour, sunflower seeds, pumpkin seeds, shredded coconut, hemp hearts, coconut sugar, cinnamon, fine sea salt, raisins, and dried cranberries. Mix thoroughly to ensure everything is evenly distributed.
  2. Add the wet ingredients: oil, molasses, and soy milk to the dry mixture. Mix well until a cohesive, moist dough forms.
  3. Let the dough rest for at least 30 minutes. This resting period allows the oats and flours to absorb the liquids, improving the texture of the cookies.
  4. The dough is now ready for shaping and baking. Alternatively, you can refrigerate the dough in an airtight container for up to 1 week, or freeze it for longer storage (see freezing instructions below).
  5. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  6. Scoop out approximately 2-tablespoon sized portions of dough. You can either roll them into neat balls and then flatten them slightly, or simply drop them onto the prepared cookie sheets and use the back of a spoon to gently shape them into flattened discs. Ensure adequate spacing between cookies.
  7. Bake for 15 to 18 minutes. The cookies should be set but still moist and wonderfully chewy in the center. Avoid overbaking to maintain their soft texture.
  8. Remove the baking sheets from the oven and let the cookies cool on the pan for about 5 minutes before carefully transferring them to a wire rack to cool completely.

Tips for Freezing Make-Ahead Breakfast Cookie Dough:

To effortlessly freeze the cookie dough for future baking, measure the dough by packing portions into a 1-cup measuring cup. Then, use a spatula to scrape the packed dough out and shape it into 6-inch (15cm) long logs. Roll each log tightly in plastic wrap, ensuring no air exposure. These frozen dough logs can be stored in your freezer for up to 3 months, making fresh, warm cookies incredibly convenient.

 

When you’re ready to bake, remove a dough log from the freezer. Let it rest at room temperature for 10 to 15 minutes while your oven preheats to 350°F (175°C). Use a sharp, serrated knife to slice the log into 8 evenly sized cookies. A helpful trick is to first cut the log in half, then quarter each half, and finally cut each quarter in half again. This method makes it easiest to achieve consistent cookie sizes. You might need to gently pat the sliced cookies with your fingers to round out their shapes and tuck in any stray bits of oats or seeds that may have escaped during slicing.

Place the frozen slices on a parchment-lined baking sheet and bake directly from frozen for 18 to 20 minutes at 350°F (175°C), or until golden brown and cooked through. Enjoy the convenience of fresh, warm cookies anytime!
