We were hunkering down for our first significant snowfall of the season – a few weeks prior, we had a light dusting that quickly vanished. As the wind howled and swirled the snow, transforming roads into icy paths and the world into a pristine white landscape, I closed my eyes for a moment. Ingredients for the Tomato Salad:

  • 2 to 4 lbs (approx. 4 to 8 cups, diced or in wedges / 0.9-1.8kg) of fully ripe, flavorful tomatoes
  • ~2 tablespoons finely chopped fresh parsley (optional, but highly recommended for freshness)

Ingredients for the Zesty Dressing:

  • 2 tablespoons mild-flavored oil (avocado oil, grapeseed oil, or a light olive oil are excellent choices)
  • 4 tablespoons (¼ cup / 60ml) distilled white vinegar (apple cider vinegar can be used for a slightly different tang)
  • 1 teaspoon fine sea salt
  • ½ teaspoon Dijon mustard (adds a subtle depth and helps emulsify)
  • A dash of freshly ground black pepper (about ¼ teaspoon)
  • A dash of sugar (about ¼ teaspoon, essential for balancing the acidity)

Instructions:

  1. Begin by placing the finely chopped onion in a medium-sized mixing bowl.
  2. In a spouted measuring cup or a small jar with a lid, combine all the dressing ingredients: oil, vinegar, salt, Dijon mustard, pepper, and sugar. Whisk thoroughly with a fork or shake vigorously until well combined and slightly emulsified.
  3. Pour approximately one tablespoon of the prepared dressing over the chopped onions, just enough to moisten them. Allow the onions to marinate for about 10 minutes while you prepare the tomatoes and parsley. This crucial step softens their sharp edge and infuses them with flavor.
  4. While the onions marinate, wash and cut your ripe tomatoes into wedges or bite-sized pieces, depending on your preference. If using, finely chop the fresh parsley.
  5. Add the cut tomatoes and chopped parsley (if using) to the bowl with the marinated onions.
  6. Pour a small amount of the remaining dressing over the tomatoes, just enough to lightly moisten them. Gently toss the salad to ensure the tomatoes are evenly coated.
  7. Let the salad rest for another 5 to 10 minutes. This allows the natural juices from the tomatoes to release and blend with the dressing, naturally mellowing its intensity and enhancing the overall flavor.
  8. After resting, taste the salad. If you desire a stronger flavor or more tang, add a bit more dressing, tossing gently after each addition, until it reaches your perfect balance. You may not need to use all of the dressing.
  9. Serve the Tomatensalat immediately for the best flavor and texture.

Leftover dressing can be stored in an airtight container in the refrigerator for several weeks. It’s fantastic for future tomato salads or as a base for other vinaigrettes. Leftover salad will keep well in the fridge for several days, though the tomatoes will soften over time.
