This feeling often translates directly into our kitchens, inspiring us to craft dishes that bridge the gap between comforting winter fare and the crisp vibrancy of springtime produce.

Discover the Delights of This Unique Broccoli Lentil Salad
This recipe began as a flavorful exploration, leading to a fresh and satisfying salad that beautifully suits our transitional weather. It takes the beloved elements of a traditional broccoli salad and elevates them with a healthy, plant-based twist, while also incorporating the refreshing characteristics often found in a classic Waldorf salad. The result is a vibrant, textural, and incredibly delicious dish that will quickly become a favorite in your household.
A Healthier Spin on a Classic
At its core, this healthy broccoli lentil salad features the star ingredient: crisp, nutrient-rich broccoli florets. However, we’ve made a significant and beneficial substitution for the traditional bacon. Instead, we use smoky lentils, which not only provide a fantastic depth of flavor reminiscent of bacon but also significantly boost the salad’s nutritional profile. Lentils are a powerhouse of fiber, protein, and essential micronutrients, making this version far healthier and more satisfying.
Beyond the broccoli and lentils, the salad bursts with other complementary textures and tastes. Diced red onions add a pleasant pungency, while sweet raisins and crisp apples introduce delightful fruity pops. The addition of crunchy celery and toasted walnuts brings in elements of a Waldorf salad, providing earthy notes and healthy fats. All these wonderful ingredients are brought together by a creamy, tangy dressing, brightened with a hit of fresh lemon. This balance of flavors and textures makes the salad light enough for spring yet substantial enough to be a hearty meal during the tail end of winter.
Crafting Your Delicious Broccoli Lentil Salad: A Step-by-Step Guide
Making this flavorful and healthy broccoli lentil salad is straightforward and rewarding. With a little preparation, you can enjoy a vibrant dish that’s perfect as a main course or a substantial side.
Prepare the Smoky Lentils
The secret to this salad’s unique appeal lies in the smoky lentils, which brilliantly replace traditional bacon. To achieve this fantastic flavor, cook French green lentils with a touch of smoked mild paprika and a bay leaf. French green lentils are ideal for salads because they hold their shape well after cooking, providing a pleasant bite without becoming mushy. Simply combine the lentils, paprika, bay leaf, and water in a small saucepan, bring it to a boil, then reduce the heat to a simmer, cover, and let them cook gently for 20 to 25 minutes until tender. After cooking, remove the lid and allow any remaining water to evaporate, stirring occasionally, until the lentils are plump and perfectly cooked. This simple step infuses them with an incredible depth of smoky flavor that makes you forget all about bacon. Plus, lentils offer a significant nutritional upgrade: they’re packed with fiber, protein, and essential minerals like iron, while being naturally low in fat. You can even cook the lentils a few days in advance and store them in the refrigerator, making meal prep a breeze.
Chop the Vegetables and Toast the Walnuts
While your lentils are simmering, you can prepare the rest of your salad ingredients. Start by chopping the broccoli florets into bite-sized pieces, ensuring they are small enough to be easily eaten in a forkful but large enough to retain their satisfying crunch. Next, finely dice the red onion and celery; the onion adds a sharp, fresh bite, while the celery contributes another layer of crisp texture. For a delightful crunch and nutty flavor, don’t forget the walnuts! Toasting them lightly in the oven for about 10-12 minutes at 350°F (175°C) brings out their natural aroma and enhances their flavor significantly. Once cooled, break them into smaller, irregular pieces with your fingers rather than chopping, as this prevents them from becoming too fine and dusty, preserving that desirable chunky texture. Lastly, core and dice a crisp apple into ½ to ¾ inch (1-1.5 cm) pieces; the apple’s sweetness and acidity are essential for balancing the other flavors.

Ingredients
For the Salad:
- ½ cup (100gms) French green lentils
- ½ teaspoon smoked mild paprika
- 1 small bay leaf
- 1 cup (240ml) water
- 4 cups (1 litre) broccoli florets, about 2 crowns, cut into bite-sized pieces
- ½ cup diced red onion ~half of a medium onion
- ½ cup (70gms) raisins
- ½ cup (50gms) toasted walnuts* (see below)
- ½ cup diced celery about 2 stalks
- 1 crisp apple
For the Dressing:
- ½ cup (120ml) mayonnaise
- ¼ cup (60ml) plain yogurt
- zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 2 tablespoons sugar
- ¾ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Combine the lentils, smoked mild paprika, bay leaf, and water in a small saucepan.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer the lentils for 20 to 25 minutes, or until they are tender yet still hold their shape. Remove the lid and continue to cook for several minutes longer, stirring occasionally, until all the water has been absorbed by the lentils. This ensures they are perfectly cooked and flavorful.
- Once cooked, spread the lentils out on a plate or shallow dish to allow them to cool completely. Cooled lentils are essential for a good salad texture. These can be prepared up to several days ahead and stored in an airtight container in the refrigerator.
- *While the lentils are cooking, preheat your oven to 350°F (175°C). Spread the walnuts in a single layer on a small baking pan. Toast them in the preheated oven for 10 to 12 minutes, or until they turn a light golden brown and become fragrant. Keep a close eye on them to prevent burning. Remove from the oven and allow them to cool completely. Once cooled, gently break the walnuts into smaller, bite-sized pieces with your fingers; this method is preferred over chopping, which can make them too fine.
- Prepare the fresh ingredients: Chop the broccoli florets into uniform, bite-sized pieces. Dice the red onion and celery into small, consistent pieces. Core the crisp apple and dice it into ½ to ¾ inch (1 -1.5 cm) pieces.
- In a large mixing bowl, combine the cooled, cooked lentils, chopped broccoli florets, diced red onion, raisins, toasted walnuts, diced celery, and diced apple.
- In a small separate bowl, prepare the creamy lemon dressing. Whisk together the mayonnaise, plain yogurt, fresh lemon zest, fresh lemon juice, sugar, salt, and pepper until the mixture is smooth and well combined.
- Pour the prepared dressing evenly over the salad ingredients in the large bowl. Toss everything together gently but thoroughly to ensure all components are fully coated with the delicious dressing.
- For the best flavor, allow the salad to rest in the refrigerator for at least 30 minutes before serving. This resting time helps the flavors to meld and deepen. The salad can be made several hours ahead and kept refrigerated.
Serve this versatile salad on fresh lettuce leaves for an extra touch of green, and with additional lemon wedges on the side if desired for an added zest.
This recipe generously serves 6.

Beyond the Recipe: More Reasons to Love Lentils and Broccoli
This salad isn’t just delicious; it’s a nutritional powerhouse. Lentils are renowned for being an excellent source of plant-based protein, dietary fiber, and various B vitamins, iron, magnesium, potassium, and zinc. Their high fiber content promotes digestive health, helps regulate blood sugar levels, and contributes to a feeling of fullness, which can aid in weight management. Broccoli, on the other hand, is packed with Vitamin C, Vitamin K, and is a good source of fiber, potassium, and iron. It’s also known for its antioxidant properties and anti-inflammatory compounds. Combining these two superfoods creates a synergy that offers incredible health benefits in every bite, making this a truly smart choice for any health-conscious individual.
Tips for Meal Prepping and Customization
One of the many advantages of this Broccoli Lentil Salad is its excellent suitability for meal prepping. It actually tastes even better the next day after the flavors have had more time to mingle. Prepare a large batch at the beginning of the week, portion it into individual containers, and you’ll have healthy and delicious lunches ready to go. The crispness of the broccoli and apples holds up well, and the dressing helps to keep everything fresh. For customization, feel free to experiment with other crunchy vegetables like bell peppers or carrots. Different nuts or seeds (like sunflower or pumpkin seeds) can replace walnuts for variety or allergy considerations. You could also swap out raisins for dried cranberries or cherries to adjust the fruity sweetness. This salad is incredibly forgiving and adapts beautifully to your preferences.
