  • Granola: Typically consists of a mixture of oats, nuts, and/or seeds, and often dried fruit. Its defining characteristic is the addition of a sweetener (like sugar, honey, or maple syrup) and fat (such as butter, oil, or coconut oil). This mixture is then baked until the ingredients become toasted, and the sugars and fats caramelize, resulting in a wonderfully crunchy texture. Granola is usually served dry with milk, or as a topping for yogurt and fruit.
  • Muesli: In its simplest form, muesli can be thought of as raw granola, without the added sugars or fats, and generally not baked. This makes it a straightforward and inherently healthy option.

To further clarify, what’s commonly referred to as “regular muesli” is a dry cereal mixture, served by combining it with milk at the time of eating. “Swiss muesli,” however, is traditionally soaked overnight in a liquid such as fruit juice, milk, cream, yogurt, or water. Fresh fruit, most notably shredded apple, is almost always a key component, either soaked with the oats or added just before serving. This soaking process softens the oats and allows the flavors to meld beautifully, creating a creamy and easily digestible dish.

The origins of Bircher Muesli trace back to the late 1800s, when Dr. Maximillian Bircher-Benner, a pioneering Swiss physician, nutritionist, and advocate for raw food and vegetarianism, established a groundbreaking medical clinic and sanatorium in Zurich. Dr. Bircher-Benner developed jaundice himself and, through personal experimentation with a raw food diet, famously claimed to have cured his condition primarily by consuming raw apples. Inspired by his experience, he created a signature dish which he named Apfeldiätspeise (apple diet dish) in German, or simply d’Spys (the dish) in Swiss German.

His original creation was a specific mixture: a small amount of oats soaked for an extended period, a generous portion of freshly shredded apple, some nuts, a squeeze of lemon juice, and, unusually for modern muesli, sweetened condensed milk. The use of condensed milk was a practical choice at the time, intended to mitigate any potential milk contamination, ensuring it was safe for his patients. At his sanatorium, patients were served a portion of this raw apple dish before every meal. Its purpose was not just nourishment, but to bolster their digestion, provide essential fiber, and supply vital energy.

This innovative apple muesli quickly gained popularity beyond the sanatorium walls. It became a cherished dish across Switzerland, originally served as an evening meal (known as Birchermüesli Complet or Schweizer Znacht, meaning Swiss supper). Over time, its role evolved, and it is now universally embraced as a popular and healthy breakfast item worldwide. Simply known as Bircher Muesli (pronounced Bir-ker-mew-slee), the dish has been adapted and customized into countless variations, reflecting the diverse tastes and creativity of those who prepare it.

Today, Bircher Muesli stands as the ultimate healthy “fast-food” breakfast. Its key advantage is the ability to prepare it ahead of time, eliminating any morning rush. This makes it incredibly convenient for busy schedules and an ideal grab-and-go option.

What Goes Into Bircher Muesli? The Evolution of a Healthy Dish

Dr. Bircher-Benner’s original recipe, a groundbreaking health food of its time, was quite specific:

  • 1 tablespoon rolled oats, meticulously soaked in 3 tablespoons of water for a full 12 hours.
  • 1 large raw apple, shredded whole (including the peel and core, which were considered essential for fiber).
  • 1 tablespoon of finely chopped hazelnuts, almonds, or walnuts.
  • The juice from half a lemon, to prevent browning and add zest.
  • 1 tablespoon of sweetened condensed milk (or a mixture of cream and honey).

As you can observe, the initial ratio of rolled oats to apple was remarkably low. This reflects its original intention as an appetizer or a digestive aid, served before a main meal. However, over the decades, Bircher Muesli has transformed into a substantial and hearty breakfast (or even a light Swiss dinner). Its modern interpretations typically feature a greater proportion of oats and a broader array of ingredients.

The soaking liquid for modern muesli is highly adaptable. Options include apple juice, other fruit juices (like pineapple juice for a tropical twist), various nut milks, dairy milk, yogurt, cream, or simply the original water. Many contemporary versions incorporate dried fruits such as raisins, apricots, or dates, which can be soaked with the oats or added fresh in the morning. A wide variety of nuts or seeds can also be included, either mixed in at the start of the soaking process or used as a fresh topping. For serving, Bircher Muesli can be garnished with additional yogurt, fresh fruit, extra nuts or seeds, a dollop of cream, or a drizzle of honey or other preferred sweetener.

While the core ingredients of oats, apple, and nuts form the traditional foundation, the possibilities for customization are virtually limitless, allowing each cook to create a version perfectly suited to their personal preferences.

For the best texture in your muesli, I highly recommend using large-flake, old-fashioned rolled oats. These oats retain more of their shape and provide a pleasant, chewy texture. While quick oats (which are smaller and more finely cut) can be used, they tend to result in a mushier, more porridge-like consistency. However, if you prefer a softer texture, quick oats might be exactly to your personal taste.

A Naturally Sweet and Effortless Start to Your Day

For those who prefer even less sweetness, or are managing sugar intake, soaking the muesli in unsweetened nut milk, dairy milk, or simply water provides an excellent alternative. You can also naturally enhance the sweetness by incorporating chopped dates or other dried fruits, either mixed in before soaking or added fresh at serving time.

Apple Bircher Muesli with Rose and Cardamom

Ingredients for the Bircher Muesli:

  • 1 large, crisp, non-browning apple (a Cosmic Crisp is highly recommended for best results)
  • 1 cup (100 g) large-flake, old-fashioned rolled oats (ensure they are gluten-free if necessary)
  • ½ cup (120 g) plain, natural yogurt
  • ½ cup (120 ml) liquid of choice: unsweetened apple juice, pineapple juice, nut milk, dairy milk, or water
  • ¼ cup (35 g) chopped raw almonds or hazelnuts
  • ½ teaspoon rosewater
  • ¼ teaspoon ground cardamom
  • Optional: maple syrup or honey to sweeten to taste, if desired

Optional toppings, to serve:

  • A drizzle of maple syrup or honey
  • A dollop of additional plain yogurt or cream
  • Extra chopped raw almonds, hazelnuts, or your favorite seeds
  • Additional chopped or thinly sliced apple
  • Fresh berries (such as blueberries, raspberries, or sliced strawberries)
  • A delicate scattering of dried edible rose petals for an elegant touch

Instructions:

  1. Thoroughly shred the entire apple, including its peel, using the large holes of a box grater. Continue grating until you reach as close to the core as possible, then discard the core.
  2. In a mixing bowl or a container suitable for storage, combine the shredded apple with all the remaining Bircher Muesli ingredients.
  3. Divide the mixture into two smaller containers or jars for convenient individual servings, or simply leave it in one larger container.
  4. Cover the container(s) tightly and refrigerate for a minimum of one hour, or ideally, overnight, to allow the oats to soften and absorb the liquids and flavors.
  5. In the morning, give the muesli a good stir before serving. Enjoy it as is, or for a wetter consistency, stir in an additional dollop of plain yogurt or a splash more of your chosen liquid.
  6. If desired, customize your muesli with optional toppings: add more yogurt, a drizzle of maple syrup or honey, extra chopped nuts or seeds, diced apple, fresh berries, and/or a scattering of dried rose petals for presentation and flavor.
  7. When prepared with a Cosmic Crisp apple, this muesli will maintain its freshness and delightful texture for up to 5 days when stored in the refrigerator. If using a different variety of apple, it is best consumed within 2 to 3 days, as other apples may soften more quickly.
