You can use classic pork bacon, turkey bacon for a lighter alternative, or low-sodium bacon if preferred. For an extra time-saving trick, consider using partially pre-cooked bacon (like the kind often found at Costco) to skip the initial baking step yourself.
- Dates: Medjool dates are unequivocally the best choice for this recipe. Their generous size, incredibly thick, and naturally caramelly flesh provides the perfect sweet counterpoint to the savory bacon and tangy cheese.
- Cheese: Blue cheese truly shines here, its sharp, salty notes creating an exquisite balance with the sweet dates. However, feel free to experiment with other flavorful cheeses such as creamy feta, tangy goat cheese, or even grated Parmesan or a sharp extra-old cheddar for a different profile. For softer cheeses, use about 1½ teaspoons to generously stuff each date. If using a harder cheese, cut it into a similarly sized lengthwise chunk and press it firmly into the date’s cavity.

How to Make These Yummy Bacon-Wrapped Date Appetizers
The secret to perfectly crispy bacon-wrapped dates without overcooking the cheese is to partially cook the bacon beforehand. If you don’t pre-bake it, the bacon will take too long to crisp up, leading to the cheese melting out completely or becoming overly done. Baking the bacon slices in the oven provides the easiest and most uniform results, but you can also pre-cook them in a frying pan or even the microwave if preferred. (Or, as a clever shortcut, simply purchase pre-baked bacon slices from stores like Costco! 😉)
To begin, preheat your oven to 400℉ (200℃). Line a baking sheet with either tin foil or a large piece of parchment paper, ensuring it extends an inch or two up on all sides for exceptionally easy cleanup. Arrange the bacon slices in a single layer on the prepared baking sheet, making sure they do not touch each other. This allows for even cooking and crisping.

Bake the bacon in the preheated hot oven for approximately 10-12 minutes. You’re looking for the edges to just begin turning a golden hue, while the slices themselves still lie relatively flat. - 12 Medjool dates
- 3.5 ounces (100 g) blue cheese (or goat cheese, feta, Parmesan, or sharp cheddar)

Instructions
- Preheat your oven to 400℉ (200℃). For easy cleanup, line a baking sheet with either tin foil or a large piece of parchment paper, ensuring the edges extend approximately 1 inch up on each side.
- Arrange the bacon strips in a single layer on the prepared parchment paper, making sure they do not touch each other. Bake for 10-12 minutes, or until the edges just begin to turn golden, but the bacon slices have not yet started to curl significantly.
- Remove the bacon from the oven and allow the slices to cool slightly for easier handling. Once cooled, cut each bacon slice in half crosswise.
- Carefully slit each Medjool date lengthwise on one side and remove the pit. Stuff each date with about 1 to 1½ teaspoons of blue cheese (or your preferred cheese). If using a harder cheese, cut it into a rectangular chunk that fits snugly into the date.
- Wrap each stuffed date with a half-slice of the partially cooked bacon and secure it with one or two toothpicks. Place the wrapped dates back onto the lined baking sheet.
- Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the bacon is beautifully golden brown and crispy. Remove from the oven, carefully remove the toothpicks, let cool for a few minutes (the filling will be very hot!), and serve warm.
