Once chilled, lightly flour a clean surface and roll out the dough to your desired thickness. Carefully transfer the rolled dough into a 9-inch (23cm) deep-dish pie shell. Crimp the edges decoratively and trim off any excess pastry for a neat finish. To prevent air bubbles and ensure an even bake, poke the bottom and sides of the pie shell all over with a fork.

Bake the regular pie shell following the same temperature and time guidelines as for the gluten-free pie shell above: in a 375°F (190°C) oven for 25 – 30 minutes, checking at the 5-minute and 10-minute marks to gently press down any bulges.
