They are a testament to how simple ingredients, when combined thoughtfully, can create culinary magic that leaves everyone craving more. This delightful fusion of sweet and savory is not just an appetizer; it’s a guaranteed showstopper for any gathering, proving that sometimes, the simplest recipes yield the most spectacular results.

The Unexpected Revelation: A Party-Pleaser From Switzerland

Our introduction to these delectable bites came during a memorable weekend party hosted by our wonderful Swiss friends. The evening was a feast for the senses, featuring an array of barbecued meats, vibrant salads, and an indulgent spread of desserts. Every dish was prepared with care and tasted incredible, leaving our bellies full and our palates satisfied. Yet, amidst this impressive spread, one appetizer stole the show and truly captivated every guest: simple bacon-wrapped fruit.

It was an unassuming dish, nothing more elaborate than thin wedges of crisp apples and juicy pears, each meticulously wrapped in a strip of savory bacon and roasted until the bacon edges began to crisp up. The contrast was extraordinary. The inherent sweetness and subtle tartness of the fruit provided the perfect counterpoint to the smoky, salty richness of the bacon. It was a symphony of flavors and textures – a true culinary revelation that left us utterly enchanted and eager to recreate the experience at home.

A Crowd Favorite: Disappearing in Minutes!

The platters of these irresistible bacon appetizers circulated through the room, and it was astonishing how quickly they vanished. When a fresh plate made its way to the area where the teenagers were gathered, it was like observing a school of piranhas in a feeding frenzy! Even us adults, striving to set a good example, found our resolve wavering. It’s almost embarrassing to admit how greedily we devoured these small bacon bundles. The truth is, once you taste them, self-restraint becomes a monumental challenge, as each bite delivers a perfectly balanced explosion of flavor.

And why wouldn’t it? There’s an undeniable allure to anything wrapped in bacon, but when that “anything” is a sweet and tangy piece of fruit, the combination reaches an entirely new level of deliciousness. This recipe isn’t just a snack; it’s an experience, a delightful fusion of sweet and savory that excites the taste buds and leaves a lasting impression. It’s the kind of dish that sparks conversation and encourages guests to ask for the recipe, making you the culinary hero of the evening.

Kitchen Frau’s Expert Tips for Perfect Bacon Bundles

To ensure your bacon-wrapped fruit appetizers turn out perfectly every time, here are some invaluable insights and tips, building on what our friend Karin shared and our own experiences in the Kitchen Frau kitchen:

  • Fruit Selection & Preparation:
    • Versatility is Key: Karin confirms that in Switzerland, pineapple and dates are also immensely popular choices alongside apples and pears. Feel free to mix and match or stick to a single fruit variety. Consider the textures and sweetness levels when combining.
    • Apples & Pears: Granny Smith apples offer a lovely tanginess that cuts through the richness of the bacon beautifully, creating a vibrant flavor contrast. Other firm apple and pear varieties with natural sweetness also work wonderfully; ensure they are not overly ripe to maintain their shape during baking.
    • Pineapple Pointers: While fresh pineapple is undeniably delicious, it contains an enzyme called bromelain. This enzyme can, surprisingly, break down the bacon if not pre-cooked. If you opt for fresh pineapple, it’s crucial to lightly roast or pan-sear the pieces first to neutralize this enzyme. Drained canned pineapple (spears or rings cut in half) works beautifully and simplifies the process significantly, offering a consistent texture and sweetness.
    • Dates: For dates, size matters. Small honey dates can be pitted and left whole, providing a delightful concentrated sweetness. Larger Medjool dates, with their rich, caramel-like flavor, are best cut in half lengthwise to make them more manageable for wrapping and to ensure an even bacon-to-fruit ratio.
  • Choosing the Right Bacon:
    • Regular Slices are Best: Always opt for regular-cut bacon rather than thick-cut. Thinner bacon cooks more evenly, crisps up better, and wraps more securely around the fruit, ensuring a cohesive bite.
    • Stretch for Success: For apples, pears, and pineapple, stretching each half-slice of bacon lengthwise before wrapping is a crucial technique. This makes the bacon thinner, allows it to adhere better to the fruit, and significantly prevents it from popping off as it shrinks during baking. For dates, which are smaller and denser, significant stretching is not as critical.
    • Nitrate-Free Options: Many brands now offer natural-ingredient bacon without chemical nitrates or nitrites. These are a great choice for those looking for a cleaner, more wholesome option and are worth seeking out for a premium appetizer.
  • The Art of Wrapping:
    • Secure Wrapping: Precision in wrapping is key. Ensure the ends of the bacon are tucked securely underneath the fruit pieces. This helps keep everything snug and prevents the bacon from unraveling during the high-heat baking process.
    • Don’t Skimp on Bacon: It might be tempting to use less than a half piece of bacon per fruit wedge to save on ingredients, but resist the urge! Bacon shrinks significantly during baking, and skimping will cause it to detach from the fruit, compromising both the flavor and presentation. A proper amount ensures the bacon stays put and provides the perfect savory embrace for the fruit.
  • Baking & Presentation:
    • Lining the Pan: Always line your cookie sheet with parchment paper or tin foil. This is not just for easy cleanup (bacon grease can be messy!), but also helps prevent sticking and ensures even baking.
    • Arrangement: Place the wrapped fruit wedges seam-side-down on the prepared baking sheet. This helps them stay intact and cook evenly, preventing the bacon from unfolding. Give them a little space to allow air circulation and promote crisping.
    • Cool and Serve: These appetizers are best served warm, but it’s vital to allow them to cool for several minutes out of the oven. They will be extremely hot and can easily burn delicate palates. This cooling time also allows the bacon to set slightly, enhancing its texture. Arrange them prettily on a platter for an inviting display – they are guaranteed to be devoured!

Bacon Bundles (Sweet & Savory Bacon Appetizers)

Ingredients:

  • 12 slices regular-cut bacon (not thick-cut, as thinner bacon wraps better and crisps more evenly)
  • One to two firm fruits, or any combination thereof:
    • Apples & Pears: Approximately 1 large apple or pear yields 12 wedges. Granny Smith, Fuji, Honeycrisp apples, or Bosc, Anjou pears are excellent choices.
    • Pineapple: 1 small fresh pineapple (pre-cooked briefly as noted in tips) or 1 can (15 oz/425g) pineapple spears or rings, thoroughly drained and cut into appropriate sizes.
    • Dates: 1 cup (about 15-20) pitted dates. Use small honey dates whole, or cut larger Medjool dates in half lengthwise.

Instructions:

  1. Preheat Oven: Preheat your oven to a hot 475°F (240°C). Line a large baking sheet with parchment paper or aluminum foil. This prevents sticking and makes cleanup a breeze.
  2. Prepare the Fruit:
    • Apples & Pears: Wash the fruit, remove the core, and then cut each fruit into quarters. Next, cut each quarter into three ½-inch thick wedges, aiming for a consistent size. This method typically yields 12 appetizers per large apple or pear.
    • Pineapple: If using fresh pineapple, cut it into 2-3 inch long sticks, about ½ inch wide. Briefly roast or pan-sear these pieces before wrapping to neutralize the bromelain enzyme. For canned pineapple, ensure it is thoroughly drained, then cut rings in half, or use spears as they are.
    • Dates: Pit all dates. Small honey dates can be left whole. For larger Medjool dates, cut them in half lengthwise to create a more manageable size for wrapping.
  3. Prepare the Bacon:
    • For apples, pears, and pineapple wedges, cut each bacon slice in half crosswise.
    • For dates, cut each bacon slice into thirds crosswise.
    • Crucial Stretching Step (for apples, pears, pineapple): Take each half-slice of bacon and stretch it lengthwise as much as you can without tearing it. This thinning process is vital as it helps the bacon adhere better to the fruit and prevents it from curling or popping off as it cooks. For dates, this significant stretching is not as necessary.
  4. Wrap the Fruit: Carefully wrap each piece of prepared fruit with the stretched bacon. Ensure that the ends of the bacon are tucked securely underneath the fruit piece. This technique is essential for keeping everything snug and preventing the bacon from unraveling during baking. Remember not to skimp on bacon; a good half-slice per wedge is essential as bacon shrinks significantly during cooking.
  5. Arrange on Baking Sheet: Place the wrapped fruit wedges seam-side-down on the prepared cookie sheet. Arrange them with a little space between each piece to allow for even cooking and proper airflow, which aids in crisping the bacon.
  6. Bake to Perfection: Bake in the preheated oven for 15 to 20 minutes for apples, pears, and pineapple. The bacon should turn golden brown in several spots, developing a delicious chewiness, and the fruit corners will begin to darken and caramelize, adding depth of flavor. The bacon will not be entirely crispy, but rather still chewy. For dates, bake for an additional 5 to 10 minutes (20-25 minutes total) until the bacon is golden brown all over and slightly crispier, as dates are denser and benefit from longer cooking.
  7. Cool and Serve: The bacon bundles will be extremely hot when they come out of the oven. To prevent burns and allow the flavors to meld, let them cool on the baking sheet for several minutes before transferring them to a serving platter. This cooling time also allows the bacon to set slightly, enhancing its texture.

Yield:

Approximately 12 appetizers per large apple or pear (using 6 slices of bacon). Yields may vary slightly depending on fruit size and bacon thickness.

Guten Appetit!

These bacon-wrapped fruit appetizers are more than just a dish; they’re an experience – a symphony of sweet and savory that will have your guests reaching for more. Simple to make, yet incredibly impressive, they are perfect for any occasion, from casual gatherings to elegant celebrations.
