For store-bought kale, a good rinse under cold running water is usually sufficient after removing the stems.

Once washed, proper drying is crucial to prevent a watery salad. I gently shake off any excess water, then lay the torn leaves in a roughly single layer onto a clean, dry tea towel. Rolling up the towel tightly and placing it in a plastic bag in the fridge overnight works wonders. The towel efficiently absorbs most of the moisture, leaving you with perfectly dry, crisp kale that’s ready to be transformed into a delicious salad without needing much, if any, additional drying right before serving.

  • A generous sprinkling of coarse ground black pepper

Instructions:

1. Prepare the Kale: Begin by tearing the kale leaves away from their coarse, fibrous middle stems. Thoroughly wash the leaves and either pat them completely dry with paper towels, spin them in a salad spinner, or utilize the tea towel method described in the “Kitchen Frau Notes” above for overnight drying. Ensuring the kale is dry is crucial for the dressing to adhere properly.

2. Chiffonade the Kale: Stack a handful of the prepared, torn kale leaves neatly on top of each other. Roll them tightly into a compact cylinder. Using a sharp knife, slice the rolled kale very thinly, creating delicate, ribbon-like strips. This technique, known as chiffonade, makes the kale much more pleasant to eat.

3. Massage the Kale: Place the chiffonade kale into a large, wide bowl. Drizzle 2 tablespoons of the chosen oil over the kale. Before you begin, have a bottle of dish soap ready on the counter, or a sink with soapy water, as your hands will become quite oily and kale-speckled during this step!

Now, for the fun and crucial part! Using your clean hands, vigorously massage the oil into the kale. Really get into it – rub the leaves between your hands, rolling and squeezing them gently. This process helps to break down the tough fibers, softening the kale and making it much more palatable without causing it to wilt completely like more delicate lettuces. Your kale will become beautifully limber and tender, ready to absorb the dressing flavors.

4. Clean Up: Once you’re satisfied with the kale’s texture, take a moment to wash your hands thoroughly.

5. Prepare Remaining Ingredients: Slice the red onion very thinly – aiming for paper-thin slices is ideal. A mandoline slicer can make this task easy, but a sharp chef’s knife works perfectly well with a steady hand. Dice the pear into roughly half-inch (1.5 cm) cubes. For the best flavor and texture, select a pear that is firm but ripe, offering a balance of sweetness and slight tartness.

6. Combine Solids: Add the thinly sliced red onions, dried cranberries, and toasted sesame seeds to the massaged kale in the large bowl.

Then, gently fold in the diced pear cubes, taking care not to bruise them.
