Life seems to swell with richness, particularly in the garden, which has burst forth with an abundance that can only be described as riotous. Plants sprawl exuberantly into pathways, playfully falling over each other, while flowers bloom in a kaleidoscope of dazzling colors. It’s a joyful struggle to keep up with the sheer volume of produce bursting from the earth. This is, without a doubt, a time of incredible plenty, a period when nature generously offers its finest gifts.
The Garden’s Bounty and Its Persistent Challenges
While the market often provides a wonderful selection, there’s nothing quite like the satisfaction of growing your own. Our garden, despite its wild beauty, tells a story of both triumph and tribulation. Everything is growing splendidly—or at least, everything that the local deer and a particularly tenacious mole haven’t managed to pillage. The year 2020, as many will recall, proved to be exceptional in many ways, including the tenacity of our local wildlife. We’ve faced unprecedented challenges with deer, those dastardly animals that sneak into our garden night after night, raiding whatever delights their fancy.



Battling the Backyard Bandits
We’ve employed a variety of tactics against these persistent visitors, with varying degrees of success. Posts tied with strongly perfumed soap were placed around the perimeter—no luck. Wire cages over the rows? They simply nibbled around and even through them. Our latest, and hopefully most effective, defense involves pounding stakes all around the garden and stringing two rows of heavy-duty nylon fishing line. The theory we heard is that deer can’t see the lines but are startled by the unfamiliar feel as they push against them, and because the barrier is invisible, they can’t accurately gauge how to jump over it.

So far, this new strategy has worked! We’re crossing our fingers that it proves to be the final, lasting solution to our deer problems. Our efforts to protect our beloved crops, like the honey-rhubarb ice cream ingredient rhubarb, have been exhaustive.
Then there’s the mole. A cunning little bugger, he’s managed to evade our traps, burrowing tirelessly under rows, creating mounds of dirt, and unfortunately, killing the plants he digs among. We’ll continue our mission to evict him, but in the meantime, I’m trying to harvest what we can before he gets to it.

For an equally wonderful experience, you can also use bocconcini slices. If fresh mozzarella or bocconcini isn’t available, don’t despair! You can still create a fantastic plain heirloom tomato salad, allowing the natural splendor of the tomatoes to shine entirely on their own.

Heirloom Tomato Salad, Caprese Style – The Recipe
Ingredients:
- 3 large, ripe, juicy heirloom tomatoes (approximately 1½-2 lbs / 700-900gms) or your finest sweet vine-ripened garden tomatoes
- 1 ball (250gms) of fresh mozzarella (Fior’ di Latte is ideal)
- 1 small handful of fresh basil leaves, torn
For the Vinaigrette Dressing:
- 1 tablespoon white balsamic vinegar
- ½ tablespoon white wine vinegar
- 6 tablespoons (90ml) high-quality olive oil or avocado oil
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions:
- Begin by carefully slicing your heirloom tomatoes to about pencil thickness. For the fresh mozzarella, slice it just a little bit thinner than your tomato slices to ensure it melts beautifully with the tomato’s juices.
- On your chosen serving platter, artfully arrange the tomato slices, slightly overlapping them. After every third tomato slice, tuck in a slice of mozzarella. This layering technique ensures an even distribution of flavors and textures. Any extra bits of tomatoes can be piled attractively into the middle of the platter, and any unused pieces of cheese can be torn and scattered over the center as well.
- Once the tomatoes and mozzarella are arranged, tear the fresh basil leaves into small pieces and generously scatter them over the entire salad. The aroma of fresh basil is key to this dish.
