The Unexpected Revelation: A Speedy Dessert Solution
My culinary journey often takes unexpected turns, and sometimes the best discoveries happen when you least expect them. A memorable afternoon last week, spent at the coast with my cousin Tammy, perfectly illustrates this. I was there to tap into her technological wizardry for my blog (a true lifesaver for a self-proclaimed computer dummy like me). After hours of wrestling with technical jargon and staring at screens, dinner time crept up on us. What unfolded next was pure kitchen magic.
With a glass of wine in hand, I watched in awe as Tammy effortlessly orchestrated a delightful dinner for five – in under thirty minutes! Her kitchen was a flurry of activity: chopping, stirring, and whirling. While she whipped up a delectable Cuban fish dish, I was tasked with merely slicing a few apples. I turned my back for a mere moment, took a few sips of wine, and by the time I looked again, dessert was already assembled and ready! It was a truly wow-tasting, incredibly easy microwave apple crisp – a revelation that instantly sparked my desire to recreate it at home.
A New Species of Apple Crisp: Fresh, Fast, and Irresistible
Tammy’s ingenious recipe, inspired by Epicure ingredients, opened my eyes to a whole new world of apple crisp possibilities. I already had a recipe for a traditional apple crisp on my site – a classic rendition featuring soft, melting apples crowned with crunchy, sweet, and spicy crumbles. So, one might ask, why the need for another?
The answer is simple: this microwave apple crisp is a completely different experience, a new species altogether. There is definitely room in my life – and your recipe collection – for both! This version celebrates the apple in a unique way. The apples are sliced incredibly thin, then barely sweetened and cooked just enough to retain much of their natural freshness and delightful crunch. They are tender yet still offer a satisfying bite, lovingly embraced by a warm blanket of cinnamon and a hint of rum.
The topping, too, sets it apart. Instead of a thick, dense crumble, this version is light, soft, buttery, and beautifully nubbly. It’s gently spiced with a touch of warmth that perfectly complements the vibrant apples. When a scoop of cold vanilla ice cream is added, it slowly melts into the spaces, creating a luxurious, creamy contrast that is utterly divine. Best of all, this entire masterpiece comes together before you can even finish asking, “Where’s dessert?” It’s an ideal solution for those moments when a craving strikes, or unexpected guests arrive, and you need a show-stopping dessert in record time.
Essential Tools for Microwave Crisp Perfection: The Mandoline Advantage
While the microwave oven is, of course, the star of this speedy recipe, there’s another crucial kitchen tool that makes all the difference: the mandoline slicer. This humble gadget is the secret to achieving the perfect texture in your microwave apple crisp. The mandoline allows you to slice apples whisper-thin, creating delicate flakes with an abundance of surface area. Why is this important? Thin slices cook rapidly and evenly in the microwave, ensuring that each piece is perfectly tender while still retaining a slight crispness, rather than becoming mushy. The increased surface area also means more delicious cinnamon and rum flavor can cling to every bite.
I personally rely on two mandolines: an adjustable one for various slicing needs and a dedicated thin-slice mandoline that I use constantly. It’s an invaluable tool not just for apples but also for quickly preparing vegetables for salads or gratins. While some might consider it an “extra” kitchen gadget, I firmly believe it’s one that truly earns its cupboard space, especially when you consider how much it elevates dishes like this quick apple crisp. Its precision and speed are unmatched, making preparation a breeze and ensuring consistent results every time.
So, get ready to welcome this “new apple crisp kid on the block” into your culinary repertoire. You might just find you’ve made a new best friend in the kitchen!
Creating Your Easy Peasy Microwave Apple Crisp: A Visual Walkthrough
Let’s dive into the simple process of creating this incredible dessert. The beauty of this recipe lies in its straightforward steps and minimal fuss.
Step 1: Preparing Your Apples
First, select your apples. Firm, crisp varieties like Ambrosia, Honeycrisp, Gala, or Fuji work wonderfully, offering a great balance of sweetness and tartness that holds up well during microwaving. There’s no need for tedious peeling; the skins add a lovely texture and nutritional boost. Simply quarter the apples, remove the cores, and then slice them as thinly as possible using your mandoline. Once you have a pile of delicate apple slices, chop through them a couple of times with a large, sharp knife. This transforms the slices into smaller “apple flakes,” ensuring they cook quickly and integrate beautifully into the crisp.
Step 2: Flavoring and First Microwave Cook
Once your apple flakes are ready, pile them into a microwave-safe baking dish. In a separate small bowl, whisk together a teaspoon of flour (sweet rice flour or all-purpose), half a teaspoon of cinnamon, maple syrup (or your preferred sugar), lemon juice, water, and a touch of rum and vanilla. This mixture creates a fragrant, lightly sweetened coating for the apples, with the lemon juice preventing browning and adding a bright counterpoint to the sweetness. Pour this aromatic mixture over the apples and toss gently with a rubber spatula until every flake is coated. Cover the dish – either with a lid or plastic wrap with a small vent – and microwave on high power for just 3 minutes. This initial burst of heat softens the apples slightly while allowing them to absorb all those wonderful flavors.
Step 3: Preparing the Light Crumble Topping
While the apples are doing their magic in the microwave, it’s time to prepare the delectable crumble topping. In a small bowl, combine quick-cooking oats (ensure they are gluten-free if needed), flour (regular or gluten-free blend), coconut sugar or brown sugar, soft butter (or coconut oil), cinnamon, ginger, and a pinch of fine sea salt. Use your fingertips to quickly rub the butter into the dry ingredients. The goal is to achieve a uniform, crumbly mixture where all the flour is incorporated, and you have delightful little “nubbly” pieces that will create that perfect soft, buttery texture when cooked. The ginger adds an extra layer of warmth, complementing the cinnamon beautifully.
Step 4: Combining and Final Microwave Cook
After the initial microwaving, remove the casserole dish and carefully take off the cover. Give the apples a quick stir to redistribute them, then pat them down so they form an even layer in the dish. Now, generously scatter your prepared crumbly topping over the apples, ensuring good coverage. Return the dish to the microwave, this time uncovered, for an additional 4 minutes on high power. During this final cook, the apples will finish heating through, softening further but still retaining that desirable slight crunch. The crumble topping will become wonderfully soft, buttery, and fragrant, creating a perfect contrast with the apples below.
And there you have it – a phenomenal, warm dessert ready to be enjoyed! You’ll feel like a true kitchen wizard for having produced such a fantastic dish in mere minutes. The aroma alone is enough to bring everyone running to the table.
Tips for a Perfect Microwave Apple Crisp Every Time
- Apple Choice is Key: Always opt for firm, crisp apples that hold their shape when cooked. Soft apples can turn to mush too quickly in the microwave.
- Don’t Overcook: Microwaves vary in power. Keep an eye on your apples during the first cook. The goal is to soften them slightly, not to fully cook them through. They will continue to soften in the second cook.
- Mandoline Safety: Always use the safety guard when slicing with a mandoline to protect your fingers. Alternatively, use a very sharp knife to slice as thinly as possible.
- Adjust Sweetness: Taste your apples before adding sugar. If they are very sweet, you might reduce the amount of maple syrup or sugar. If they are tart, you might add a little more.
- Gluten-Free Option: This recipe is easily adaptable for gluten-free diets. Simply ensure you use certified gluten-free oats and a good quality gluten-free all-purpose flour blend for both the apple mixture and the crumble topping.
- Serving Temperature: While delicious warm, this crisp is also surprisingly good at room temperature, making it a great make-ahead option.
Serving Suggestions & Variations
This microwave apple crisp is a versatile dessert that shines in many forms. The classic pairing of warm apple crisp with a melting scoop of vanilla ice cream is always a winner. The cold, creamy ice cream provides a delightful contrast to the warm, spiced apples and buttery crumble. For a dairy-free alternative, consider a homemade honey vanilla ice cream. Whipped cream is another fantastic topping, adding a light, airy richness. You could also serve it with a dollop of Greek yogurt for a slightly healthier, tangy twist, or even a drizzle of caramel sauce for extra indulgence.
Feeling adventurous? Here are a few variations to try:
- Nutty Crumble: Add finely chopped pecans, walnuts, or almonds to the crumble mixture for extra crunch and nutty flavor.
- Spice It Up: Enhance the apple mixture with a pinch of nutmeg, allspice, or a dash of cardamom for a more complex spice profile.
- Berry Blast: Incorporate a handful of fresh or frozen berries (like blueberries or raspberries) with the apples before microwaving for a fruity medley.
- Citrus Zest: Add a teaspoon of orange or lemon zest to the apple mixture for a brighter, more aromatic flavor.
- No Rum? No Problem: If you prefer to avoid alcohol, simply substitute the rum with an additional tablespoon of water or apple juice.
Conclusion: Dessert Perfection, Redefined
This microwave apple crisp truly redefines what’s possible for quick, comforting desserts. It’s a testament to how simple techniques can yield extraordinary results. Whether you’re a busy parent, a student needing a quick treat, or simply someone who appreciates efficiency without compromising on flavor, this recipe is a game-changer. It delivers all the warm, cozy satisfaction of a traditional apple crisp but in a fraction of the time, making it perfect for weeknight indulgences or last-minute entertaining. Give it a try, and prepare to be amazed by the deliciousness and ease!

Equipment
- a mandolin for slicing thinly
- a microwave oven
Ingredients
- 1½ lbs (700gms) firm crisp apples (3 large or 4 medium ones) I like Ambrosia apples
- 1 teaspoon sweet rice flour or regular all-purpose flour
- ½ teaspoon cinnamon
- 1 tablespoon maple syrup coconut sugar, or brown sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 tablespoon rum or an additional tablespoon water
- 1 teaspoon vanilla
For the crumble topping:
- ⅓ cup 35gms quick-cooking oats (gluten free if necessary)
- 3 tablespoons flour or a gluten-free flour blend
- 2 tablespoon coconut sugar or brown sugar
- 2 tablespoons soft butter or coconut oil
- ¼ teaspoon cinnamon
- ¼ teaspoon ginger
- ⅛ teaspoon fine sea salt
Instructions
- Cut the apples in quarters and cut out the cores. Slice each apple quarter as thinly as possible on the mandoline. Once you have one apple sliced, push the slices into a neat heap on the cutting board and, using a large sharp knife, cut down through the pile in half-inch (1 cm) intervals to reduce the size of the apple slices to large flakes. Repeat with the remaining apples. You should have about 6 cups of sliced apples.
- Place all the apple flakes into a 1½ to 2 quart casserole dish.
- In a small bowl, stir together the teaspoon of flour and the ½ teaspoon cinnamon. Whisk in the maple syrup, lemon juice, water, rum, and vanilla. Pour this mixture over the apples and toss with a rubber spatula to coat all the slices. Cover with a lid or with plastic wrap with a hole poked into it (to allow steam to escape) and microwave on high power for 3 minutes.
- While the apples are microwaving, mix up the crumble: combine the crumble ingredients in a small bowl, and use your fingers to work the butter into the dry ingredients until all the flour is incorporated and the mixture is evenly crumbled.
- Remove the casserole dish from the microwave and remove the cover. Stir the apples, then pat them down so they are evenly spread out in the dish. Scatter the crumbles over the top and microwave, uncovered, for an additional 4 minutes on high. The apple slices will be heated through, but still be partly crunchy.
- Serve warm with a spoonful of vanilla ice cream (or this dairy-free homemade one) or whipped cream.
- Serves 4 to 5.
Guten Appetit!
