Maple Walnut Energy Balls Recipe
gluten-free, dairy-free, vegan
- 2½ cups (250gms) walnuts
- 1¼ cups (125gms) rolled oats (ensure certified gluten-free if necessary)
- ½ cup (100gms) pitted Medjool dates (approximately 6 large dates)
- ¼ cup maple syrup (preferably Grade A Dark, Robust Taste for a richer flavor)
- 2 teaspoons pure vanilla extract
- ¼ teaspoon fine sea salt
- 3 tablespoons maple sugar (or coconut sugar), optional, for coating
Instructions:
- Preheat your oven to 350°F (180°C).
- Spread the walnuts in a single layer on a baking sheet. Toast in the preheated oven for 10-12 minutes, or until they are lightly golden brown and emit a wonderfully fragrant, nutty aroma. Keep a close eye on them to prevent burning. Let them cool completely.
- Once cooled, remove about ½ cup (50gms) of the toasted walnuts and chop them roughly. Set these aside; they will be folded in later for added texture.
- In a powerful food processor (like my amazing new Breville!), grind the remaining 2 cups of rolled oats into a coarse flour.
- Add the remaining 2 cups of toasted walnuts, the pitted dates, maple syrup, vanilla extract, and salt to the food processor with the oat flour. Process the mixture until it comes together and clumps into a large, cohesive ball. This might take a few minutes, depending on your processor.
- Add the ½ cup of reserved chopped walnuts to the food processor. Pulse a couple of times, just until the chopped nuts are incorporated into the dough. Be careful not to over-process at this stage; you want to maintain some texture from the chopped walnuts.
- Scoop out approximately 1½ tablespoons of the dough at a time. Press the dough firmly into a compact clump in your hand, then roll it into smooth balls, about 1¼ inches (3cm) in diameter. (For smaller bites, use 1 tablespoon of dough and roll into 1-inch balls, yielding approximately 30 pieces). Your hands will likely get a bit oily from the walnuts during this process.
- At this point, you can leave the maple walnut energy balls plain, or if desired, roll them in the maple sugar (or coconut sugar) for an extra layer of flavor and a pretty finish.
- Store the finished energy balls in an airtight container. They can be kept in the refrigerator for up to two weeks or frozen for up to six months.
