Lentil Sloppy Joes Recipe

This recipe yields about 6 servings of hearty, flavorful Lentil Sloppy Joes. It’s perfect for a family dinner or for meal prepping ahead of a busy week. Get ready for a delicious, satisfying, and endlessly customizable meal!

Ingredients:

  • 1½ cups big green or brown lentils (see Notes, above)
  • 4½ cups water
  • 3 cloves garlic, divided
  • 2 whole cloves
  • 2 bay leaves
  • 2 medium onions
  • 1 large red or green bell pepper
  • 1 stalk celery, minced very finely
  • 2 tablespoons olive oil
  • 1 can (156ml/5.5oz) tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder (homemade or commercial, see Notes, above)
  • 1 tablespoon Worcestershire sauce (use gluten-free if necessary, or the balsamic/soy sauce substitute, see Notes, above*)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dry mustard powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1¼ teaspoons salt
  • ½ teaspoon black pepper

To Serve (Optional):

  • 6 hamburger buns or Kaiser rolls (gluten-free or vegan if necessary)
  • 1 cup grated cheddar cheese (or vegan cheese substitute)
  • Crushed red chili flakes (for an extra kick, if desired)

Instructions:

  1. Cook the Lentils: In a medium saucepan, combine the rinsed lentils and 4½ cups of water. Peel one of the garlic cloves and stick the two whole cloves into it. Add this garlic clove and the bay leaves to the saucepan with the lentils. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan tightly with a lid, and let the lentils simmer gently for 30 minutes, or until tender but still holding their shape somewhat.
  2. Prepare the Aromatics: While the lentils are cooking, prepare your vegetables. Peel and finely dice both onions. Mince the remaining two cloves of garlic, either by hand or by pressing them through a garlic press. Cut the bell pepper into thin strips, then cut these strips crosswise into small, uniform cubes. Mince the celery finely.
  3. Sauté the Vegetables: Heat a large, heavy-bottomed skillet (or Dutch oven) over medium heat. Add the olive oil.
