From the animated conversations in local trattorias to the timeless gestures exchanged in crowded markets, every moment is a snapshot of life lived fully.

Our journey continued south to Naples, another magnificent hub for people-watching. Here, life moves at a unique pace, primarily on two wheels. Motorbikes are king, with everyone – and often their dog – zipping through the narrow streets. It’s a common, heartwarming sight to see entire families artfully balanced on a single scooter, making their way to Sunday church, a testament to resourcefulness and community spirit. One of the most unforgettable experiences was the Catania Fish Market, a riot of sounds, smells, and vibrant characters. Here we met a toothless “Casanova” who, with a basil sprig jauntily tucked behind his ear, attempted to charm the ladies by offering them fresh shrimp to taste. When his romantic overtures didn’t quite land, he simply twisted off the shrimp’s head and, to the duly impressed onlookers, devoured the entire thing, shell and all. It was a moment of raw, authentic Sicilian charm, perfectly encapsulating the spirit of the market.

Don’t be alarmed by the softness of the batter – it’s meant to be quite pliable. The trick to easily rolling the cookie balls without them sticking to your hands is to keep your hands slightly moistened with water between each cookie. This simple tip will make the process much smoother and more enjoyable!

For a beautiful presentation and an extra layer of flavour, you have a few options for finishing these cookies. You can roll them in various nuts like pine nuts, slivered almonds, or chopped pistachios as suggested in the recipe. Alternatively, for a more classic look, you can roll the cookie dough balls in icing sugar before baking, then gently press a single blanched almond or a vibrant candied cherry into the top of each.   • ⅛ teaspoon fine sea salt (helps to stabilize the egg whites)
  • ½ cup (110 grams) granulated sugar
  • ¼ cup (85 grams) good quality honey (adds moisture and chewiness)
  • ½ teaspoon pure vanilla extract (enhances the overall flavour)
  • 1 teaspoon freshly grated lemon zest (from about one small, organic lemon for maximum fragrance)
  • 2½ cups (250 grams) finely ground blanched almonds or high-quality almond flour (the finer the grind, the smoother the cookie)
  • About 1½ cups of your choice of toppings: pine nuts, slivered almonds, chopped pistachios, whole pistachios, hazelnuts, or additional blanched whole almonds for garnish.

Instructions:

  1. In a clean, dry mixing bowl (preferably a stand mixer with a whisk attachment), whip the egg whites with the salt until they become foamy and soft peaks begin to form.
