- 1 cup (225 g / 2 sticks) unsalted butter, softened to room temperature
- 1¼ cups (175 g) gluten-free flour blend, or regular all-purpose flour for a non-gluten-free version
- ½ cup (50 g) almond flour
- 2½ teaspoons baking powder
- 5 large eggs, at room temperature
- 1 cup (200 g) granulated sugar
- 1 teaspoon pure vanilla extract
For Assembly and Finishing:
- ⅔-¾ cup (160-180 ml) of strawberry or raspberry jam, preferably a low-sugar variety for balanced sweetness
- 1 cup (240 ml) heavy cream (whipping cream), 35% butterfat or higher
- Icing sugar (confectioner’s sugar) for dusting
Instructions
- Preheat your oven to 350℉ (180℃) to ensure it’s at the correct temperature before baking.
- Prepare two 8-inch (20 cm) round, straight-sided cake tins. Grease them thoroughly with butter, then line the bottom of each tin with a parchment paper circle. To do this, simply place the tin on parchment paper, trace around the base, and cut out the circles.
- In a large mixing bowl, combine all the cake ingredients: softened butter, both gluten-free and almond flours, baking powder, large eggs, granulated sugar, and pure vanilla extract.
Tip: Pour the vanilla extract directly onto the sugar in the bowl. This prevents it from clumping with the flour and potentially creating small brown spots in your finished batter.
- Using an electric mixer on medium speed (or a sturdy wooden spoon for hand mixing), beat the ingredients until the batter is completely smooth and well combined. Scrape down the sides of the bowl as needed.
- Divide the cake batter evenly between your two prepared tins. Use a spatula to gently spread the batter right to the edges, smoothing the tops as much as possible for even baking.
- Bake the cakes for approximately 25 to 27 minutes. It’s important not to open the oven door for at least the first 20 minutes of baking, as this could cause the delicate sponges to sink. The cakes are done when a wooden skewer inserted into the center comes out clean.
- Allow the baked cakes to cool in their tins for 10 minutes. Then, carefully invert them onto a wire cooling rack and gently peel off the parchment paper circles. Flip the cakes right side up (you might find it easier to invert them onto a plate first, then back onto the cooling racks) and let them cool completely before assembly.
- To assemble, place one of the cooled cake layers, bottom side up, onto your chosen serving plate or cake stand. Spread a generous, even layer of strawberry or raspberry jam, leaving about ¼-inch border from the edges. For an optional fresh touch, you can arrange a single layer of fresh sliced strawberries or halved raspberries on top of the jam.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently spread this luscious whipped cream over the jam layer on your cake.
